About Chef Luke Palladino
Luke’s journey into the kitchen began when he was a child growing up in an Italian-American family that spent hours around the dinner table, sharing lives and favorite dishes from their homeland. This exposure to the joy that comes from great meals was the motivation behind Luke’s decision to attend the Culinary Institute of America where he graduated in 1989 and was voted “the most likely to succeed” by his classmates.
Luke spent three years living and cooking in Italy. There, he immersed himself in the culture of Italy’s varied regions – learning and living the cuisine and cultures of Rome, Piemonte, Publia, Fruili, Sicily and Tuscany. While in Italy, he rose to position of executive chef and partner at Venice’s internationally celebrated Ristorante al Covo and aligned himself with The Slow Food Movement, and organization dedicated to combating the culture of fast food by preserving and passing down age-old culinary practices.
Luke Palladino is a passionate chef – passionate about the regional cuisine and flavors of Italy and about seeing that every guest dining at his restaurants falls in love with the food in the same way he has.
Bragozzo Trivia
The inspiration for Luke’s newest concept comes from the tradition of the flat-bottomed Venetian fishing boat called a “bragozzo” and the unique connection of its historical use in the Adriatic Sea and the Gulf of Mexico. Their distinct construction allows for sailing on shallow water through landscapes not traversed by ordinary vessels.
An “osteria” is a local eatery – usually family owned and operated offering a seasonal menu of the chef’s regional specialties simply prepared.
